Instructions
Prepare the apple:
Cut into cubes and soak in water with the juice of ½ lime or lemon to prevent browning.
Chop the veggies:
Cut the lettuce into bite-sized pieces, peel the cucumber, remove the seeds, and chop it into small cubes.
Prep the toppings:
Chop the pecans and avocado into small squares.
Make the dressing:
In a small bowl, whisk together olive oil, white vinegar, lemon juice, honey, salt, and pepper until combined.
Assemble the salad:
In a large bowl, mix lettuce, apple, cucumber, avocado, goat cheese, pecans, and cranberries.
Dress it up:
Add the dressing and toss gently, or serve it on the side so everyone can add to their taste.
