Instructions
In a large pot or skillet, melt the butter over medium heat.
Add the chopped onion and garlic. Cook for 1 to 2 minutes, until the onion is translucent and fragrant.
Stir in the riced cauliflower, mixing well so it's coated in the butter, onion, and garlic.
Cook for 3 to 4 minutes, stirring occasionally, until the cauliflower begins to soften.
Add the pre-cooked mixed vegetables and salt. Mix everything together well.
Cook for 2 more minutes, until everything is well combined and heated through.
Serve warm, garnished with chopped cilantro. For a complete meal, top with one or two fried eggs, just like in the video.
