Authentic Mexican Sopa de Fideo con Pollo Recipe

Sopa de fideos was one of my favorite Mexican meals growing up and it might be a favorite of any Mexican children’s home. Mexican sopa de fideo, also known in Mexico as sopa aguada, is a brothy soup that is a heart healer. The fideo soup recipe is perfect for dinner on cold, busy nights to spoil the family. This recipe is very special for me as every time I eat it, it transports me back to Mexico to do crowded family meals at my abuelita’s home surrounded by family and love.  

Made with fresh tomatoes, angel hair pasta, chicken stock, and some other magic ingredients, this soup is a favorite in Mexican households. Authentic sopa de fideo is a popular side dish but this Mexican soup can become a main dish by adding shredded chicken.

Mexican noodles soup Ingredients:

  • 2 garlic cloves
  • 5 tomatoes
  • 1 teaspoon of salt
  • 1 package of fideo (Mexican noodles), or you can check the pasta substitutes I give you in this post
  • 3 teaspoons of olive oil or cooking oil
  • 10 sticks of fresh cilantro
  • ½ white onion
  • 6 cups of water or chicken broth if you are not cooking the chicken for the soup
  • 1 chicken breast
  • 1 tablespoon chicken bouillon (optional)

Instructions:

  • In a large pot, bring 5 cups of water to a boil. Add the chicken breast, 5 cilantro sticks, ¼ onion, 1 garlic clove, and ½ teaspoon of salt. Allow it to simmer for approximately 15 minutes or until the chicken is cooked through.
  • While the chicken is cooking, blend the tomatoes, 1 garlic clove, ¼ onion, and 1 cup of water until smooth.

  • In a separate pot, heat 1  teaspoon of olive oil over medium heat. Add the tomato sauce and cook for about 5 minutes, stirring occasionally.
  • In another pot, heat 2 teaspoons of olive oil. Add the fideo and sauté until they turn a light golden brown.

  • Once the chicken is cooked, remove it from the broth, along with the cilantro, onion, and garlic. Shred the chicken.
  • Add the chicken broth to the pot with the fideo, followed by the tomato sauce and the remaining cilantro on top. Allow it to boil for about 8 minutes or until the fideo is cooked.

  • Take off the cilantro sticks. Stir in the shredded chicken and add salt to taste.
  • Serve hot, garnished with queso fresco or Parmesan, if desired. Squeeze a bit of lime juice for an extra burst of flavor.

  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Additional Tips:

  • For a quicker version, substitute rotisserie chicken and boxed chicken broth.
  • If you prefer, add diced potatoes to the soup for a heartier version.

What type of pasta can I use for Mexican sopa de fideo?

We traditionally use Mexican pasta,  fideo pasta,  which is pretty much small pieces of angel pasta, or thin spaghetti. You can find fideo noodles at any Mexican supermarket, or you can use any of these pasta presentations just by following the exact recipe instructions:

  • Elbows pasta, macaroni
  • Angel hair pasta crushed into smaller pieces
  • shell pasta
  • Stelline
  • alphabet pasta is known in Mexico as sopa de letritas

Here are some favorites that Mexicans like to add on top:

  • crumbled queso fresco
  • shredded melting cheese
  • hot sauce or slices of chiles en vinagre
  • avocado slices
  • sour cream
  • lime juice
  • chili powder such as tajin
  • red pepper flakes

I love to add some shredded Chihuahua cheese that melts in the hot soup and creates strings of cheese when eating. This is the ultimate Mexican comfort food!

Make it more nutritious.

I love to hide veggies in my children’s meals, and this Mexican sopa works perfectly for that. Shreed some zucchini and add it while the sopa is boiling. They will not even know that some veggies are hiding in there. 

Some homes like to add some mezcla campesina veggies that is a mix if corn, peas, and carrots, it works great with this soap.

Affordable yet delicious!

This Mexican noodle soup is a classic Mexican dish and very popular in Comidas corridas as it is a very affordable yet amazingly tasty recipe. Do you know what a comida corrida is?
