A bit about me:
For over 12 years, I’ve been on a mission as a Hispanic cooking influencer to give traditional Mexican recipes a nutritious and low-fat makeover. On my YouTube channel, Las Recetas de Laura, I have a community of over 2.6 million followers who have trusted me to create delicious Mexican food with a healthy twist. My culinary journey led me to be a special guest at Michelle Obama’s Partnership for a Healthier America conference and a stint as a storyteller for Disney Princess in California, sharing my story of overcoming bullying and overweight insecurities and finding a way to be happy and having a healthy lifestyle at any size. I am proud to be recognized as one of Chicago’s Latinos 40 under 40 for creatively bringing our beloved Mexican cuisine into the spotlight in healthier, more nutritious ways.
I specialize in crafting authentic Mexican food, drawing inspiration from my beloved abuelita Conchis, a natural chef who delighted in creating deliciosos dishes like no other. My childhood memories are adorned with the enchantment of watching her work wonders in the kitchen, effortlessly sprinkling seasonings like magical powders.
Driven by her influence, I embraced the art of experimentation and embarked on my culinary journey. What captivates me about Mexican cuisine is its inherent balance. In Mexico, we celebrate the abundance of vegetables, with salads accompanying most meals and creamy veggie soups as favorite entrees. Mexican food can be healthy if you cook it the right way.
Through my Mexican food blog, I aim to share the secrets of making authentic Mexican dishes more healthily. I provide valuable resources, guiding you through the process of creating enchiladas without the need for frying, and advocating for a lighter approach to cooking. Consider salsa as nothing more than a vibrant green smoothie draped over tacos—a shot of essential vitamins!

I was born and raised in Chihuahua, Mexico. I love learning new things, studying, cooking, swimming, enjoying nature, and writing. I hold a bachelor’s degree in communication sciences and a postgraduate degree in journalism from the University of Canterbury in New Zealand. I had the opportunity to pursue my postgraduate studies after winning the Peace Ambassador scholarship from the Rotary Foundation. I also have postgraduate studies in Gender Violence from the UNAM and a diploma in Right to Information from the Konrad Adenauer Foundation. I have given lectures on leadership, UN Millennium Goals, and personal development in countries such as Brazil, the United States, Mexico, the Dominican Republic, and Canada.
Currently, I work as a journalist and content creator for Radio Claret America, in addition to creating content for my brand Las Recetas de Laura, and Food and Deals by Laura. I currently live in the city of Chicago with my two young children, two cats, and my charming “Chilango” husband.
