Instructions
Heat oil in a skillet over medium heat.
Beat the eggs with salt and pour them in. Cook until almost set but still soft.
Stir in the guajillo sauce, letting the eggs “drown” in it.
Add cheese and let it melt into the sauce.
Transfer to a plate or cazuela.
Top with a drizzle of crema and fresh onion.
