Mexican Huevos Ahogados in Guajillo Sauce

Español Who said Mexican food can’t be light? Sundays at my abuelita Conchi’s house were always special. She had a big pot of steaming menudo on the stove, but for those of us who didn’t feel like menudo, there was another treasure waiting: huevos ahogados in guajillo sauce topped with melted cheese, crema, and fresh onion.

This Chihuahua-style breakfast is one of my absolute favorites. Imagine fluffy scrambled eggs drowned in a silky, smoky homemade guajillo sauce, the cheese melting into every bite, and a spoonful of crema to balance the flavors. It’s hearty, comforting, and still feels light compared to heavier Mexican breakfasts.

Here is the recipe for the authentic guajillo sauce that I used to prepare these easy huevos ahogados.

Ingredients

  • 2 large eggs
  • ⅛–¼ cup of melting cheese (I like Chihuahua cheese, but mozzarella works too)
  • 1 teaspoon Mexican crema or light sour cream
  • ¾ cup homemade guajillo sauce (recipe)
  • ½ teaspoon cooking oil
  • ¼ teaspoon salt
  • 1 tablespoon chopped onion

How to Make Huevos Ahogados in Guajillo Sauce

  • Heat oil in a skillet over medium heat.
  • Beat the eggs with salt and pour them in. Cook until almost set but still soft.

  • Stir in the guajillo sauce, letting the eggs “drown” in it.

  • Add cheese and let it melt into the sauce.

  • Transfer to a plate or cazuela.
  • Top with a drizzle of crema and fresh onion.
