Pollo en Chipotle - Authentic Mexican Creamy Chipotle Chicken Recipe
This Pollo en chipotle recipe is a personal favorite of mine. The salsa's sweet, smoky, and tangy notes perfectly complement the chicken, creating an extraordinary flavor combination. And with it being a one-pan recipe, bid farewell to the hassle of cleaning up after cooking!
3/4cupmexican crema (or substitute with sour cream)
1piecechipotle chili
1tbspChopped cilantro or parsley for garnish
1tbsptomato sauce or Caldo de Tomate Knorrs (optional, for a richer red color)This is optional
1/2tbspparmesan cheese
Instructions
STEP 1: SAUTÉ AROMATICSStart by sautéing the onion and garlic in a hot pan until fragrant and golden. This creates a rich base for the sauce. Once done, transfer them to a blender.
STEP 2: PREPARE THE CHICKENSalt and pepper the chicken and in the same pan, using the remaining flavorful oil, sear the chicken breasts until golden brown on both sides to lock in juices and flavor. Cover and cook on medium-low heat for about 12 minutes or until fully cooked
STEP 3: BLEND THE SAUCEIn the blender, combine the sautéed onion and garlic, milk, and Mexican crema (or Greek yogurt for a lighter option). Add one chipotle chili to start, and blend until smooth. Taste and adjust the heat by adding more chipotle if desired. For a deeper color and flavor, incorporate some tomato paste or caldo de tomate. Season with salt to taste.
STEP 4: COMBINE AND SERVELower the heat on the pan and pour the chipotle crema over the chicken breasts. Sprinkle with parmesan cheese and stir gently to melt the cheese into the sauce, keeping the heat low to avoid boiling and curdling.Serve your Pollo en Crema de Chipotle with fluffy white rice or al dente spaghetti. Garnish with freshly chopped cilantro for a burst of color and flavor.
