Pollo en Chipotle – Authentic Mexican Creamy Chipotle Chicken Recipe

Tonight’s dinner just got an upgrade with this Pollo en Crema de Chipotle (Creamy chipotle chicken). The smoky, tangy, and sweet flavors in this delicious sauce make this Mexican meal a fiesta de sabor. Some Mexican dishes, like this one, can be surprisingly elegant and perfect for a special night with friends or family. This Pollo en Chipotle recipe is one of my favorites for a fancy Mexican dinner, pairing beautifully with Espagueti a la Mantequilla or arroz con vegetables.

Learn to cook Mexican food from a Native Mexican Tips

  1. Sweet and Sour Kick: Add a teaspoon of brown sugar when blending the ingredients to elevate the flavor.

Instructions

Step 1: Sauté Aromatics

Start by sautéing the onion and garlic in a hot pan until fragrant and golden. This creates a rich base for the sauce. Once done, transfer them to a blender.

Step 2: Prepare the Chicken

Salt and pepper the chicken and in the same pan, using the remaining flavorful oil, sear the chicken breasts until golden brown on both sides to lock in juices and flavor. Cover and cook on medium-low heat for about 12 minutes or until fully cooked.

Step 3: Blend the Sauce

In the blender, combine the sautéed onion and garlic, milk, and Mexican crema (or Greek yogurt for a lighter option). Add one chipotle chili to start, and blend until smooth. Taste and adjust the heat by adding more chipotle if desired. For a deeper color and flavor, incorporate a tablespoon of tomato paste; the secret for deep red in Mexican rice and even this creamy chipotle sauce is Caldo de Tomate by Knorr; it is super popular in Mexico. Season with salt to taste.

I would suggest adding one chipotle, blending ingredients, and adding more to taste little by little; chipotle is usually a very spicy pepper.

Step 4: Combine and Serve

Lower the heat on the pan and pour the chipotle crema over the chicken breasts. Sprinkle with parmesan cheese and stir gently to melt the cheese into the sauce, keeping the heat low to avoid boiling and curdling.

  • 2 pieces boneless skinless chicken breasts
  • 1/2 tbsp cooking oil
  • 1/2 tbsp salt
  • 5 pinches pepper
  • 1 clove garlic
  • 1/2 piece onion
  • 1 cup milk
  • 3/4 cup mexican crema (or substitute with sour cream)
  • 1 piece chipotle chili
  • 1 tbsp Chopped cilantro or parsley for garnish
  • 1 tbsp tomato sauce or Caldo de Tomate Knorrs (optional, for a richer red color) This is optional
  • 1/2 tbsp parmesan cheese
