The smoky, tangy, and sweet flavors in this delicious sauce make this Mexican meal a fiesta de sabor. Salt and pepper the chicken and in the same pan, using the remaining flavorful oil, sear the chicken breasts until golden brown on both sides to lock in juices and flavor. Cover and cook on medium-low heat for about 12 minutes or until fully cooked.
Step 3: Blend the Sauce
In the blender, combine the sautéed onion and garlic, milk, and Mexican crema (or Greek yogurt for a lighter option). Add one chipotle chili to start, and blend until smooth. Taste and adjust the heat by adding more chipotle if desired. For a deeper color and flavor, incorporate a tablespoon of tomato paste; the secret for deep red in Mexican rice and even this creamy chipotle sauce is Caldo de Tomate by Knorr; it is super popular in Mexico. Season with salt to taste.
Step 4: Combine and Serve
Lower the heat on the pan and pour the chipotle crema over the chicken breasts. Sprinkle with parmesan cheese and stir gently to melt the cheese into the sauce, keeping the heat low to avoid boiling and curdling.

- 1/2 tbsp parmesan cheese
