Arrachera Mexican Marinade
Arrachera is a traditional meat used for carne asada. Today I will teach you how to make the perfect Mexican marinade for an Authentic Arrachera Recipe. Arrachera is the given name in Spanish for skirt steak. With a good marinade, arrachera, turns out tender and juice. The way to season arrachera will definitely be a good marinade or you can check my arrachera rub recipe at the end of this post. This is my Mexican father’s delicious arrachera steak recipe. HOW TO MAKE ARRACHERA MARINADE
I am going to share with you my Mexican father’s arrachera marinade. This is a very simple and delicious beef Mexican marinade recipe that you can use on any other kind of beef too. I love to marinade arrachera. Let’s be clear here. Arrachera is no the most expensive and high-quality beef cut so a good marinade can make a well-performed flavor difference. I will recommend marinating overnight but if you need to make it right away after the marinade that is ok. Just let it marinade for at least 15 to 20 minutes and put it on the grill. I have done both and both work pretty well.
INGREDIENTS PER 2 POUNDS OF ARRACHERA
- 1/3 cup of Worsherter sauce
- 1/4 cup of soy sauce
- 1 spoon of garlic
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/4 cup of olive oil
Place all theingredients in a conteiner on top of your arracherra. Cover your container with a lid and shake a little bit to make sure that all the marinade ingredients come together and that all the arrachera meat is getting marinated. Leave it in the fridge over night and flip it over onces in a while. You can just marinade and let it marinating for 15 or 20 minutes and grill! it is delicious any way.
HOW MUCH ARRACHERA PER PERSON
Five ounces of raw arrachera will be the right portion per person. Most probably half of your guests might want to go seconds for arrachera. I would go for at least 6 ounces per adult and about 4 per kid. You can complement your arrachera with other traditional carne asada meals like Frijoles Charros, Grilled Poblanos with cheese and Guacamole. Arrachera in Spanish means skirt steak. WHAT IS ARRACHERA MEAT
The arrachera is a part of the cow that comes from the animal’s Rib. Arracheras beef can be tough so Mexicans usually use tenderized and a really good marinade to soften the beef and give it more flavor. Arrachera is cheaper than other beef cuts so it has become a very popular carne asada. You might be asking yourself if arrachera is a carne asada? Let’s say that in Mexico a Carne Asada is a barbecue. It is how we call an event such you are invited to a carne asada! and we will also call carne asada to any grilled beef. So yes, Arrachera is a Carne Asada along with T-bone, Ribeye, New York etc.
HOW TO COOK ARRACHERA
- First of all, you need to tenderize the arrachera or skirt steak so you can have a tender and juice carne asada. Here is an easy and natural way to tenderize any kind of beef. Marinade the arrachera for at least 20 minutes. If you have time leave it in the fridge overnight for a delicious arrachera Mexican marinade flavor. When the briquets or the coal are turning a little white color place the arrachera on the grill. Sometimes arrachera can be a very long steak so there is no problem if you cut it in a few pieces in order to fit it on your grill. If the arrachera cut is not that thick it might take about 6 minutes on each side to achieve a medium-well term. My secret for the perfect grilled arrachera is to flip it over when I see some accumulated blood on top. That is a sign that the under part is already cook and is time to flip it.
ARRACHERA TACOS
- Once you have achieved your meat doneness place it in a cutting board and cut pieces along the beef strips. Arrachera tacos are usually beef pieces cutted in strips not squares following the beef pattern.
- Place your beef inside a warm tortilla and add some salsa or guacamole on top.

ARRACHERA IN THE AIR FRYER
You can make arrachera in the air fryer. obviously there is no way to compare arrachera grilled over mezquite briquets, wood, or coal does make a good job on arrachera flavor but you can always go simpler and easier in the Air Fryer. Furthermore set your Air Fryer at 400f and here are the cooking times for your favorite arrachera cooking term
- Rare arrachera in the air fryer 6 minutes at 400f
- Medium Arrachera in the air fryer 8 minutes at 400f
- Well-done arrachera in the air fryer 10minutes at 400f
ARRACHERA RUB
The following ingredients are per one pound of skirt steak or arrachera. You can make your own arrachera rub by mixing 1/4 cup of olive oil, 1/2 teaspoon of sea salt, 1/4 teaspoon of black pepper and 1/2 teaspoon of oregano. Mix all the ingredients and rub on the arrachera.

ARRACHERA COSTCO
I have bought the arrachera at Costco. What I like it is that it is nicely cut but I might be honest and say I am not a fan of their marinade. I will prefer to make my own. - 1 airtight container
Ingredients

- 1/4 cup of olive oil
