Pesto Chicken

An Italian classic turned into a quick, flavorful option for busy weeknights. The parmesan and fresh basil give it a bright, fresh taste that both kids and adults love. Using Greek yogurt instead of heavy oil keeps it light without losing any of that creamy texture.

Ingredients

  • 8 fresh basil leaves
  • 2 garlic cloves
  • 1 1/2 teaspoons grated parmesan cheese
  • 2 tablespoons lemon juice
  • 1 teaspoon olive oil
  • 1/2 cup Greek yogurt
  • 7 almonds

Blend all the ingredients together, add the chicken pieces of your choice, stir well so everything is fully coated, and store in a zip-top freezer bag.

How to Organize Them in the Freezer

Once your bags are ready, label each one with the flavor and the date you made it. They keep for up to 3 months in the freezer. The day you want to use one, move it to the refrigerator the night before so it thaws slowly, or use your microwave’s defrost setting if you forgot. After that, just cook it on the griddle, in the oven, or in a skillet, whichever you prefer.

Instructions
 

  • For all three versions, blend all the ingredients except the vegetables.
  • Pour the sauce into a freezer bag, add the chicken and the vegetables, seal tightly, and mix.
  • Store in the freezer for up to 3 months.
