This cheese quesadilla recipe is the Authentic Mexican Quesadillas recipe. This cheese-filled tortilla is delicious and satisfying. Growing up in Mexico I know firsthand that Cheese Quesadilla is any mom’s lifesaver fast dinner or lunch recipe!

One of my faves is adding some fried pico de gallo on top or some avocado but many people love sincronizadas.

Sincronizadas are quesadillas with a slice of ham in the middle and are also very popular. You can also try this carrot-cheese quesadilla or make it keto with my spinach tortillas!

Filled tortilla or Cheese Quesadilla recipe?

Here is something tricky, If you travel to Mexico city and ask for a quesadilla they will give you a filled tortilla with flor de calabaza (zucchini flower), chicken tinga or so many options of Mexican casseroles, all you can imagine but cheese!!

Quesadilla is not the same all over Mexico, especially in Mexico city! so make sure that if you travel to Mexico be specific that you want a cheese quesadilla!

Quesadilla Corn Tortilla

This filled tortillas can be made as quesadilla corn tortilla (quesadillas de tortilla de maíz) or tortilla de harina AKA flour tortillas. Traditionally the north of Mexico eats more flour tortillas than the south and central Mexico.

Corn tortillas are a healthier option, especially if you make sure the tortilla toasts really well, which can help your body digest the corn tortilla as fiber, this can help with calories in quesadilla.

How to Make Quesadillas                                       

This is probably one of the easiest recipes you will ever learn although you need to make some decisions before starting to cook a quesadilla. Corn or flour tortillas? the process to make quesadilla is the same as tortillas de maiz or harina.

Ingredients

  • 2 corn or flour tortillas
  • 1/4 cup grated cheese, can be Chihuahua, Oaxaca, cheddar, Mexican blend, or any melting cheese.

Instructions

  • Place the grill on medium heat and let it warm up
  • Add the two tortillas on top of the griddle. Something funny about this is that they won’t stick! I have heard of people adding oil to the griddle! this is not Mexican!
  • Let the tortilla warm up for around 25 seconds and turn over, let it warm for another 20 seconds, and flip it around.
  • Add cheese on top of one of the tortillas and cover with the other tortilla on top.
  • Press with the shovel and let it cook until the cheese is completely melted. This might take one or two minutes.

How to Flip a Quesadilla

So this is the million-dollar question, How to flip a quesadilla! The trick for flipping a quesadilla is having the cheese melted on the side of the tortilla that is on the griddle. once the cheese is melted is time to just grab a kitchen shovel and flip the quesadilla. Let cheese melt on the other side and the food is ready!

  • 1/4 cup chopped onion
  • 1 cup chopped tomato
  • 1 diced jalapeño
  • 3 pinches oregano
  • Salt to taste
  • 1 teaspoon cooking oil

How to Make Quesadilla Salsa

Pour the oil into a pan at medium heat and once it is hot add the onion and sauteé until starts to change color. Add the tomato and jalapeno along with the pinches of oregano and salt. Let it cook for 1 minute and this is all set to place on top of the quesadila!

How to make Mild or Hot Quesadilla Sauce

For my pico de gallo salsa, we are using a jalapeño.  Remember that the spiciest part of chili pepper is the vein and seeds.  This is good to know when preparing your sauces and salsas because you can make it as spicy or as mild as you want.  If you want a mild flavor, try to get rid of veins and seeds.  If you can handle hot and spicy flavors, use the whole chili pepper.  A great way to tell how spicy chili pepper is is by cutting a piece off and smelling it.  If it smells spicy, it is!

  • Pico de gallo is a great way to add vegetables to your meal.  Tomatoes are full of lycopene, and vitamins C-great nutrients for vision and immune health. 
  • The onions are antibacterial and help the immune system as well. 
  • Jalapeño has capsaicin, which has been shown to be helpful in losing weight. 
  • I also like to add a cactus salad to this meal, which is great for digestion and detoxification.  The last touch of Mexican flavor is a helping of beans, which are full of iron and fiber.
