Grilled Sirloin Steak Tacos
Sirloin tacos have a special place in my heart. They take me back to those days at Ciudad Juarez right at the border with El Paso Texas, savoring the exquisite authentic Mexican flavor of steak street tacos from El Tacotote. This place serves the best sirloin tacos and tempts you with an incredible taco toppings bar boasting salsas and chiles needed for a real good taco!
My recipe is inspired by those flavors and memories. The marinade I’ll share is an authentic Mexican recipe for marinating carne asada. It is an easy recipe with simple ingredients that you might already have. Because you keep a cold lager in your fridge, don’t you? It can’t be Taco Tuesday without a cold Corona or Modelo beer.

Instructions to make steak taco marinade:
- In an airtight container, place the finely chopped garlic cloves.
- Add the lager beer and soy sauce or Maggi sauce.
- Incorporate the black pepper, salt, and your favorite BBQ seasoning. Mix well.
- Submerge the steak in the mixture, layering alternate slices of meat and onion until the container is filled.
- Cover and let marinate overnight. The marinade will also help you to have a tender steak
Note: If you’re short on time, even letting the meat marinate for half an hour will enhance its flavor, although the longer, the better!
Grilling Instructions for the Sirloin:
- Use a charcoal grill, making sure it’s nearly white to prevent the meat from burning. The steak will be ready in about fifteen minutes. The key is to flip it when you see the juices bubbling on the surface.
- If you opt for a gas grill, ensure it reaches a high temperature to sear the meat, between 450 and 500°F.
Preparing the Sirloin Tacos:

- Slice the sirloin into thin strips or small pieces for easier consumption.
- Prepare your favorite toppings. Below, I’ll present some ideas.
- Place the hot meat in the center of the tortilla. Add chopped onion and cilantro to taste.
- Serve on a plate and offer your favorite toppings for each diner to customize their tacos.
Corn or Flour Tortillas
The authentic Mexican food choice between corn and flour tortillas can vary depending on where you live in Mexico. In regions like Sonora and Sinaloa, flour tortillas reign supreme in taco culture, while in other parts of the country, corn tortillas are the traditional choice. However, the decision ultimately comes down to personal preference. I prefer corn soft tortillas for tacos and flour tortillas for quesadillas.

Sour cream can be added to the list although is not recommendable if you are having soft tacos as it can wet the tortilla and break it. In Mexico, we don’t use sour cream or tacos, just for tostadas. tostadas would be the equivalent of hard tacos and they are better at holding wet ingredients.

How Do You Like Your Meat Cooked?
For precision in cooking your meat to perfection, having a food thermometer is key. Here are the ideal internal temperatures for different levels of doneness:
- Rare: Internal temperature of 125°F for a cool, red center.
- Medium Rare: Internal temperature of 135°F for a warm, red center.
- Medium: Internal temperature of 145°F for a warm, pink center.
- Medium Well: Internal temperature of 150°F for a slightly pink center.
- Well Done: Internal temperature of 160°F for little to no pink.
Ensuring your meat reaches these temperatures guarantees your desired level of good steak doneness every time.
