What always makes me smile is how diverse their group is. It feels like something out of a movie: one has a Chinese father and an American mom, another has an Irish dad and American mom, another has a Puerto Rican father and an African-American mother, one has a Danish dad and an Afro-descendant mom, and Jorge… well, he’s the son of two Mexicans.

That’s one of the beautiful things about living in a city like Chicago — the incredible diversity of its community.
Over the years, the moms have also become friends. A couple of months ago, two of them and I went out for dinner at a restaurant in the Oakbrook mall area. That night I ordered something I rarely choose when dining out: a white fish fillet with a parmesan crust, served with buttery asparagus and sweet peas.
Let me tell you… it was unforgettable.

The fish was juicy, topped with a golden parmesan crust and finished with melted butter. The asparagus and peas had a delicate sweetness that paired perfectly with a touch of lime and butter. Easy Parmesan Crusted Fish Recipe
Ingredients
- 4 White fish fillets (tilapia, cod, or halibut work well)
- 2 tablespoons mayonnaise
- ½ cup grated parmesan cheese
- ¼ cup breadcrumbs
- Salt to taste
- 1/4 teaspoon garlic salt
- Cooking spray
For the vegetables:
- 2 cup asparagus, trimmed
- 1 cup green peas
- 3 tablespoons butter
- 1 tablespoon lime or lemon juice
- Salt to taste
How to Make Parmesan Crusted Fish
- Preheat the oven to 360°F (180°C).
- Spread a thin layer of mayonnaise on top of the fish fillets.


- In a bowl, mix the grated parmesan cheese, garlic salt and breadcrumbs.
- Place the fish mayonnaise-side down into the parmesan mixture, pressing gently so it sticks.


- Place the fish on parchment paper on a baking tray.
- Sprinkle a little salt on top and spray some cooking oil to achieve the golden crust.


- Bake for about 15 minutes, until the fish is cooked and the crust is golden.

Tip: You can also cook this fish in a skillet if you prefer a crispier crust.
How to Make the Butter Asparagus and Peas
- In a skillet, melt 1 tablespoon of butter over medium heat.
- Add the asparagus and sauté for about 2 minutes.
- Add the green peas and cook for another minute.


- Cover the pan and cook for 2 minutes.
- Add 2 more tablespoons of butter, the lime juice, and salt to taste.


How to Serve
Serve the parmesan crusted fish with the sautéed asparagus and peas, and drizzle some of the melted butter from the vegetables over the fish.
