Salsa Taquera Recipe︱Street Stand Taqueria-style Favorite
Español This is my husband’s favorite Salsa Taquera Recipe, also known as salsa verde cruda (raw green sauce). This salsa verde, famous in taco stands throughout Mexico City and central Mexico, is incredibly easy and fast to make.
It uses fresh vegetables and does not require cooking. I make it at least once per week as my husband loves it, and as a Mexican home, we need to have fresh, homemade salsa all week long.
This taqueria-style salsa is a favorite for tacos in taquerias and Mexican street food stands. It is a favorite for many Mexican dishes such as pambazos, tacos de canasta, birria tacos, carnitas tacos, carne asada, and tacos al pastor.
This taqueria salsa only requires simple ingredients:
- Serrano peppers (substitute with jalapeno peppers for a milder salsa)
- Cilantro stems (also known as coriander)
- Garlic cloves
- teaspoon Salt
- Tomatillos
How long does Salsa Last?
This salsa has a smooth, thick consistency and does not require water. Once made, it can last up to five days in an airtight container in the refrigerator. This is the perfect taqueria-style salsa for your next Taco Tuesday!
Is it too spicy?
This salsa taquera recipe is versatile and can be customized to your own taste. Whether you prefer a very spicy salsa or a milder salsa, this recipe is easy to adjust. You can manage the spice level by adding more tomatillos until you have the right amount of heat or substitute serrano peppers for jalapenos, which have a milder taste.
This family recipe was passed down from my husband’s abuelita, who had a Fonda in Mexico City (a Fonda is a small establishment between a restaurant and a food stand). He cherishes many childhood memories, enjoying his grandma’s cooking and eating this green salsa with tacos placeros, over Arroz Rojo Mexican rice, and even in sopa aguada.

Equipment

Ingredients
- 6 pieces tomatillo
- 2 pieces serrano peppers
- 8 stems cilantro
- 1/2 teaspoon salt
Instructions
- Peel the tomatillo's skin, then place them in a container filled with cold or room temperature water, ensuring to remove any remaining skin or dirt.
- Place the tomatillos in the blender.
- Add 1/2 bunch of cilantro.
- Add 1 garlic clove.
- Add 2 serrano peppers without the branch.
- Add 1/2 teaspoon salt.
- Blend until pulverized.
- Taste and add salt to taste. If it is too spicy, add more tomatillos.
